Ruby chocolate was created by the Belgian chocolate manufacturer Barry Callebaut Group. It originates from ruby cacao beans which are grown in Ecuador, Brazil and Ivory Coast. Like many others crops, cocoa beans are influenced by the land they grow on. Yet, the terroir is not the key contributor to obtaining pink chocolate. So how did we go from dark, milk, and white to pink?
To make chocolate, cacao beans need to be fermented, dried, roasted and ground to obtain cacao juice, which is then transformed into cacao butter, cacao powder, cacao block and, eventually, chocolate. But in the case of ruby chocolate, a pink powder is extracted from the cocoa beans. And as surprising as it sounds, these cocoa beans are not genetically modified - the pink colour is naturally present in them. Hence the pink colour of the final chocolate.
Regarding the taste, imagine a raspberry flavoured white chocolate with some bites of milk chocolate. Other flavour notes include sour, yoghurt tart and tangy.
